Our Messy Journey with Alpha-Gal and Histamine Intolerance
We’ve done it. We sold the house, bought the 36ft travel trailer, and officially hit the road as a full-time RV family. We’re homeschooling our 8-year-old from the road, figuring out this new life one state at a time.
It’s a huge new adventure for our whole family. There’s me (J. Lynn), my husband Dan, our 8-year-old son Charlie, and our two dogs, Rae and Ella. We’re all in this new life together, figuring it out one day at a time.
But our version of this RV dream has a massive plot twist. My husband isn’t just along for the ride; he’s navigating it with both Alpha-Gal syndrome (a severe allergy to mammal meat and by-products) and Histamine Intolerance.
This means our tiny RV kitchen isn’t just for making simple road-trip snacks. It’s a full-time science lab where every meal is a complex puzzle, and “What’s for dinner?” is the hardest question of the day.
I’m going to be completely honest: I am overwhelmed. We do not have this all figured out, and this blog isn’t a “how-to” guide from an expert.
You’ll see a lot of RV blogs about 30-minute meals and spending less time inside. That’s not us. We’re here to share the honest truth: our life revolves around a tiny kitchen, where nothing is fast.
